Chocolate Pudding

Happy 4th of July – we are looking forward to good food, sparklers and a spirited reading of the Declaration of Independence!

 The remainder of day 3 was happily uneventful.  We had a nice, very locavore dinner: homemade fettucine, slow-roasted tomato sauce, focaccia, caprese salad, squash and zucchini, and a choice of tapioca or chocolate pudding for dessert. No appliances or kitchen fixtures were harmed in the making of this meal (the new kitchen faucet is doing well!)

The highlight for me was the chocolate pudding. Like coffee, chocolate is a highly prized non-local ingredient. Luckily, unsweetened cocoa powder is inexpensive (great for the $129 non-local budget) and versatile. Here’s the recipe I used for an easy and delicious chocolate pudding:

Chocolate Pudding

1/2 c sugar

1/4 c unsweetened cocoa powder

1/4 c cornstarch

pinch of salt

2 3/4 c milk

1 T butter

1 t vanilla

In a saucepan, stir sugar, cocoa powder, cornstarch and salt. Add the milk and heat on medium, stirring constantly until mixture comes to a boil and thickens.  Stir in butter and vanilla. Serve warm or cold.
