Happy 4th of July – we are looking forward to good food, sparklers and a spirited reading of the Declaration of Independence!
The highlight for me was the chocolate pudding. Like coffee, chocolate is a highly prized non-local ingredient. Luckily, unsweetened cocoa powder is inexpensive (great for the $129 non-local budget) and versatile. Here’s the recipe I used for an easy and delicious chocolate pudding:
Chocolate Pudding
1/2 c sugar
1/4 c unsweetened cocoa powder
1/4 c cornstarch
pinch of salt
2 3/4 c milk
1 T butter
1 t vanilla
In a saucepan, stir sugar, cocoa powder, cornstarch and salt. Add the milk and heat on medium, stirring constantly until mixture comes to a boil and thickens. Stir in butter and vanilla. Serve warm or cold.
